Caramel Macchiato Cookie Recipe

There is no better scent than walking into a house and smelling one of two smells, freshly brewed coffee or fresh baked cookies, am I right? Well, when you bake these cookies you will be in cafe bakery heaven, but don’t just take my word for it. 

Believe it or not, I created this cookie with the inspiration of Daylight Savings Time (the OG prototype name for this cookie). I mean the struggle is real when you lose an hour of sleep and coffee is like your only hope for getting through the day.

With warm flavor, it’s like a delectable dessert that can be eaten any time of the day, even in the morning…no shame.

How to make these cookies

NOTES & TIPS:

  1. There is a little prep work that goes into making these cookies, mainly because of the brown butter. You will want to make sure you plan to make the brown butter ahead of time so that it has time to cool down (sometimes if I’m in more of a hurry I will place it in the refrigerator or freezer to help the cooldown time along). It just can’t be scorching hot, you want it to be close to room temperature. If you don’t know how to brown butter, there are plenty of resources out there on how to do it.   2. Once the Coffee Cookie Dough is mixed you will want to make sure you scoop the dough onto a cookie sheet and place it in the refrigerator for at least 1 hour. If you bake these without refrigeration, the cookies may spread too thin.

  3. If you don’t want to bake all of the cookies at once, you can pop the cookie dough scoops in the freezer in a ziplock freezer bag for a later time. Perfect for a quick craving!

  4. Make your Caramel Macchiato Glaze when you put your batch of cookies in the oven. It is super quick to make and you want to be able to drizzle on top of the cookies when they are freshly out of the oven and air baking.

Caramel Macchiato Cookie

This is fresh morning coffee with the warmth of the sun peeking in all in a cookie. This cookie has a warm flavor, with small bursts of chocolate and hints of pecan. Can be served with or without the glaze, but the caramel macchiato flavor of the glaze adds a nice touch like your favorite dessert latte.

Ingredients

Instructions

  1. Preheat the oven to 375° F (190° C)
  2. Brown one stick of butter in a pan and bring the other stick of butter to room temperature. Allow brown butter to cool.
  3. Combine the butter, dark brown sugar, and light brown sugar in the bowl of a stand mixer fitted with the paddle attachment and cream together on medium-high speed for 2-3 minutes. (Or you can use a hand mixer)
  4. Add the 1 egg + 1 egg yolk and vanilla extract to the mixture and beat on high for 7 mins. Make sure you are scraping your bowl periodically to ensure everything is thoroughly mixed.
  5. In a separate container, mix the flour, instant coffee, baking powder, baking soda, and salt together.
  6. Add your dry ingredients (flour, instant coffee, baking powder, baking soda, and salt mixture) to the bowl and stir on low until ingredients are evenly distributed approximately 30-45 seconds. Do not overmix.
  7. Next, add the mini semi-sweet chocolate chips and chopped pecans and stir on low for another 30-45 seconds.
  8. Once everything is combined, scoop your dough with a 2 3/4 ice cream scoop or 1/3 measuring cup.
  9. Pat the tops of the cookie down slightly with your hand.
  10. Allow dough to chill in the refrigerator for 30 mins to 1 hour. This will minimize your cookies from spreading too much or baking too flat.
  11. In your preheated oven of 375, bake cookies for 10-12 mins.
  12. CARAMEL MACCHIATO DRIZZLE: In a bowl, mix by hand powdered sugar, instant coffee, and caramel macchiato creamer until fully combined into a smooth and creamy texture.
  13. While cookies are air baking, drizzle the Caramel Macchiato Glaze on top and allow cookies to cool.
  14. Cookies will keep fresh for up to 5 days at room temperature in an air-tight container and up to 1 month in the freezer.

Notes

When producing this recipe, I used a kitchen scale and measured the ingredients in grams. I highly recommend investing in a kitchen scale to ensure the accuracy of the recipe. Once you go kitchen scale, you will never go back to measuring with cups!
